Ingredients
- 4 slices bacon chopped
- 1 cup onion diced
- 1 cup red onion diced
- 4 cups sweet potato diced (about 3 medium sweet potatoes)
- 2 cups fresh spinach
- ½ teaspoon paprika
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- ¼ teaspoon oregano
- 3 cloves fresh garlic minced (or ¼ teaspoon garlic powder)
- ½ teaspoon salt or more to taste
- ¼ teaspoon pepper or more to taste
- 1 green onion chopped
- 4 large eggs
- sriracha sauce optional topping

Instructions
- Preheat oven to 400 degrees F.
- Cook bacon in a large cast iron skillet (or oven-safe skillet) on medium-high heat until crispy. Remove bacon from the pan with tongs to a paper towel-lined plate and keep bacon grease in the pan.
- Add the diced onion and pepper to the pan with bacon grease and cook for 2-3 minutes until soft.
- Then add the diced sweet potatoes to the pan and stir until coated with bacon grease.
- Sprinkle the seasonings on the potatoes: chili powder, paprika, cumin, oregano, garlic, salt and pepper. Stir until well combined. Cover and cook on medium for 10-12 minutes until mostly tender.
- Chop the bacon while the potatoes cook. Then once the potatoes are mostly tender, add the chopped bacon and spinach. Cook until spinach is wilted.
- Make 4 wells in the pan and crack the eggs into them.
- Bake at 400 degrees F for 10-15 minutes until eggs are done.
- Sprinkle green onions on top once removed from the oven. Serve with sriracha sauce and sliced avocados.
