Cook bacon in a large cast iron skillet (or oven-safe skillet) on medium-high heat until crispy. Remove bacon from the pan with tongs to a paper towel-lined plate and keep bacon grease in the pan.
Add the diced onion and pepper to the pan with bacon grease and cook for 2-3 minutes until soft.
Then add the diced sweet potatoes to the pan and stir until coated with bacon grease.
Sprinkle the seasonings on the potatoes: chili powder, paprika, cumin, oregano, garlic, salt and pepper. Stir until well combined. Cover and cook on medium for 10-12 minutes until mostly tender.
Chop the bacon while the potatoes cook. Then once the potatoes are mostly tender, add the chopped bacon and spinach. Cook until spinach is wilted.
Make 4 wells in the pan and crack the eggs into them.
Bake at 400 degrees F for 10-15 minutes until eggs are done.
Sprinkle green onions on top once removed from the oven. Serve with sriracha sauce and sliced avocados.
