Garlic Parmesan Brussels Sprouts
Once the ultimate in veggies kids refuse to eat, we all know Brussels sprouts finally became popular in recent years, especially in restaurants. This garlic parmesan Brussels sprouts recipe is my favorite to make at home. (My kids even like them!)
Were any of you fans of Brussels sprouts growing up? While they used to top lists of foods people hate, they took off as a trend after many restaurants began offering some fresh takes on them several years ago.
While I like many I’ve tried, one of my favorite ways to make at home are these garlic parmesan Brussels sprouts. They’re now a staple at my dinner table, and my kids actually look forward to them!
Now that I know a little more about their nutritional value, I totally understand why parents have always wanted their kids to eat them. They’re low in calories and a good source of fiber, protein, and vitamins and minerals like vitamin K, vitamin C, vitamin A, vitamin B6, folate, potassium, manganese, and thiamine.
Quite a list, right? Believe it or not, your ingredient list for this recipe is much shorter! There are only six basic ingredients, including salt and pepper. That prep time is about as good as it gets!
So what flavors pair well with Brussels sprouts?
For a hearty main course, serve them alongside a protein like roasted or baked chicken, a grilled steak, pork chops or baked salmon. Round out the meal with other simple sides, such as mashed potatoes or wild rice.
These also complement Italian dishes well, thanks to the garlic-parm combination. They’ll add a little green to your plate alongside classic homemade lasagna or stuffed Italian chicken roll-ups.
For beverages, enjoy a crisp white wine, such as Sauvignon Blanc or Pinot Grigio, to enhance the flavors of the dish. Good non-alcoholic options include light, fresh lemonade or tea with lemon.
Speaking of lemon, my lemon Bundt cake would be the perfect dessert to conclude any of these meal suggestions. My second choice would be slices of apple pizza.

Frequently asked questions about garlic parmesan Brussels sprouts
I get the same questions from friends when I serve this Brussels sprouts dish, so I have answered them below. If you have a question I’ve not covered, leave it in the comments, and I will respond as soon as I can!
What is the best way to clean Brussels sprouts?
Cleaning Brussels sprouts is so simple: Just rinse the sprouts with water, trim the ends, and remove any loose or discolored outer leaves.
Why are my Brussels sprouts still hard after cooking?
If your Brussels sprouts are still hard after cooking, they may not have cooked long enough or were too large to begin with. To get them perfectly tender, adjust the roast time and cut any large sprouts into smaller pieces for more even cooking.
Why are my Brussels sprouts mushy after baking?
Mushy Brussels sprouts are often a result of overcooking, not being spread evenly around the pan, or using too much oil. Ensure you bake them at the recommended temperature, and adjust the cooking time or oil amount as needed.
What takes the bitterness out of Brussels sprouts?
This recipe reduces bitterness by adding the savory ingredients — garlic and parmesan — which balance the bitterness. Another common combo you’ll see with Brussels sprouts is balsamic vinegar and a drizzle of honey, which do the same thing with a different flavor profile.
What is the best way to store and reheat leftovers?
To best maintain the flavor and texture of these Brussels sprouts, transfer them to an airtight container or resealable plastic bag before placing them in the fridge. They should stay fresh for up to three or four days.
When you’re ready to enjoy the leftovers, preheat your oven to 400°F oven and bake them for 5-10 minutes or until heated through. You can add back a little crispiness by reheating them in a pan lined with parchment paper.
You can also reheat them in the microwave using 30-second intervals, although the texture will be better when they’re reheated in the oven.
