These easy chicken fajitas almost always hit the spot, from weeknight dinners to casual gatherings with friends. Delicious and simple with effortless prep, this dish is ideal for busy cooks who want to serve a delicious meal without spending hours in the kitchen.

Fajitas originated in Texas and Northern Mexico, blending the flavors of both countries for a yummy dish that’s become a staple worldwide. You’ll see them made with all types of meats, including shrimp or steak fajitas, or a mixture of several.
The protein in this fajitas recipe is marinated chicken, cooked with colorful bell peppers and onions, and served on a warm tortilla.
The beauty of these easy chicken fajitas lies in their versatility and endless options to customize them for your family and guests. You can keep the meal simple with a basic chicken and veggie filling, or add your favorite toppings like cheese, sour cream, guacamole, or salsa for an extra burst of flavor.
I make these at least once a month for my family, if not more! It’s the perfect option if you’re tired of ground beef tacos!
What to serve with easy chicken fajitas
Chicken fajitas can be served as a casual, build-your-own meal or dressed up for more formal events, so they work well for many different types of occasions.
When planning your chicken fajita feast, consider serving various sides and starters to create a well-rounded meal. Begin with chips and salsa, white queso dip, guacamole, or a platter of mini-quesadillas as appetizers.
For sides, Mexican rice, refried beans, and a fresh green salad offer a perfect balance of flavors and textures to complement the main dish.
When it comes to beverages, consider serving refreshing margaritas, either frozen or on the rocks, for the adults. Some appropriate non-alcoholic options could be iced tea, horchata or agua fresca.
And don’t forget dessert! Mexican flan, tres leches cake, or sopapillas with honey provide a sweet finish to your Tex-Mex meal. For some north-of-the-border options that pair well, think citrus: easy, moist lemon loaf; no-bake frozen lemonade pie; or lemon Bundt cake.
