Much like the story of Caesar salad, Cobb salad is said to have come about through the resourcefulness of a restaurateur who craved a late-night (early morning) snack. It was way back in 1937 when Robert Cobb, who co-owned Hollywood’s original Brown Derby restaurant in Los Angeles, got hungry and rooted around in the restaurant fridge for options.

He threw together what ingredients he had on hand – lettuce, hard-boiled eggs, tomato, avocado, chicken, bacon and cheese – chopped it all up and added a simple vinaigrette. Pleased with the results, he shared the recipe with his buddy Sid Grauman of Grauman’s Chinese Theatre, who popularized the salad at his establishment, too.

Today, the Cobb salad is a go-to choice for a filling lunch or a light dinner. Back in 2022, the Cobb went viral thanks to Jennifer Aniston mentioning she ate one almost daily on the set of Friends. Ingredients

Salad Ingredients:

  • 5 cups romaine lettuce chopped
  • 2 seasoned roasted chicken breasts chopped
  • 3 hard-boiled eggs sliced
  • 1 large avocado sliced or chopped
  • 6 slices crispy bacon crumbled
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 4 ounces blue cheese or feta cheese crumbled
  • 2 Tablespoons chives chopped

Vinaigrette Dressing Ingredients:

  • 2 Tablespoons shallot finely chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup vegetable oil
  • 1 Tablespoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 teaspoon sugar

Instructions

  • Make the Dressing:
  • Place all dressing ingredients into a jar with a tight-fitting lid. Shake vigorously until well-blended and emulsified. You could also use a bowl and a whisk. Taste and adjust seasonings as desired. Set aside.
  • Make the Salad:
  • Cook bacon on the stovetop in a saute pan until crispy and set aside, leaving bacon fat in the pan.
  • Season chicken with salt and pepper and cook chicken in bacon fat until cooked through. Remove with a slotted spoon and let cool.
  • Toss chopped lettuce in half the vinaigrette and assemble in a serving bowl or plate.
  • Then top with rows of chicken, bacon, hard-boiled egg, avocado, cherry tomatoes, red onion, and cheese.
  • Sprinkle with chives, and fresh pepper, and drizzle additional dressing on top of the salad accordingly to your liking.
