What makes a Cobb salad so delicious? It's all about the cool contrast of garden-fresh ingredients, with savory toppings and a tangy dressing. Can't you already taste the crispy lettuce, creamy avocado and crunchy bacon with bursts of blue cheese?
Place all dressing ingredients into a jar with a tight-fitting lid. Shake vigorously until well-blended and emulsified. You could also use a bowl and a whisk. Taste and adjust seasonings as desired. Set aside.
Make the Salad:
Cook bacon on the stovetop in a saute pan until crispy and set aside, leaving bacon fat in the pan.
Season chicken with salt and pepper and cook chicken in bacon fat until cooked through. Remove with a slotted spoon and let cool.
Toss chopped lettuce in half the vinaigrette and assemble in a serving bowl or plate.
Then top with rows of chicken, bacon, hard-boiled egg, avocado, cherry tomatoes, red onion, and cheese.
Sprinkle with chives, and fresh pepper, and drizzle additional dressing on top of the salad accordingly to your liking.
