Cheesy Sausage Wonton Cups
Equipment
- Mini Muffin pan
- Large saucepan
Ingredients
- 24 wonton wrappers
- 1 pound breakfast sausage
- 1 cup shredded cheddar cheese plus extra for topping
- 1 cup shredded Monterey Jack cheese
- ½ green pepper finely chopped
- ½ red pepper finely chopped
- 5 green onions chopped and divided (reserve some for topping)
- ½ cup ranch dressing
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees F.
- Lightly spray a muffin pan with cooking spray. Gently press the wonton wrappers in and around the tops of the muffin pan. Bake for 5 minutes or until the edges of the wontons just barely start to brown. Remove from the oven and set aside.
- In a large skillet, cook the sausage until there is no more pink and drain the grease. (Drain well so the bottoms of the wonton cups don’t get soggy)
- Remove sausage from the pan while you cook peppers and onions in the same skillet. Once cooked, return the sausage to the pan and add the cheddar, Monterey cheese,ranch and salt and pepper. Cook until cheese is melted in.
- Scoop mixture into each wonton cup. Bake another 5-10 minutes or until the wonton cups are all evenly browned
- Garnish with more shredded cheese and thinly sliced green onions.
