Ingredients
- ยพ cup all-purpose flour
- ยฝ teaspoon baking soda
- ยฝ teaspoon baking powder
- ยฝ teaspoon salt
- ยฝ cup unsalted butter softened
- ยพ cup packed light brown sugar
- ยผ cup granulated sugar
- ยผ cup creamy peanut butter
- 1 Tablespoon honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- ยพ cup chocolate chips or chunks
- 1 cup M&M’s divided
Instructions
- Whisk the flour, baking soda, baking powder, and salt together and set aside.
- Cream together the butter and both sugars until light and fluffy, about 2 minutes.
- Mix in peanut butter, honey, egg and vanilla until well combined. Scrape down sides as needed.
- Add the dry ingredients to the batter and mix just until combined. Fold in the oats, chocolate chips/chunks and half the M&Ms. Do not overmix
- Cover dough and refrigerate for 20-30 minutes.
- Preheat oven to 350 degrees F and prep your baking pans with parchment paper while the dough is chilling.
- Once ready, scoop about 2 tablespoon sized balls onto the cookie sheets about 2 inches apart. Add a few more M&Ms on top for presentation, if desired. Bake for 10-12 minutes or until the edges are golden brown.
- Let cool a couple minutes before transferring to the cooling rack or serving plate.
