- 1 large onion cut into thin strips
- 1 pound chicken breast cooked and chopped
- 8 ounces favorite pasta
- 10 ounces Rotel diced tomatoes with green chilies
- 3 cloves garlic minced
- 2 cups low sodium chicken broth
- ยฝ cup heavy cream
- ยฝ cup shredded mexican cheese blend
Fajita Seasoning
- 1 teaspoon smoked paprika
- 2 teaspoon chili powder
- 2 teaspoon cumin
- 1 teaspoon garlic powder
- ยฝ teaspoon oregano
- ยผ teaspoon cayenne pepper optional
- ยฝ teaspoon salt
Instructions
- In a small bowl, mix all the fajita seasonings together.
- Heat a large nonstick skillet over medium with 1 tablespoon of olive oil. Season the chicken breast pieces with half of the fajita seasoning and place into a hot skillet. Cook until chicken is browned. Once the chicken is cooked, take it out of the pan and set aside.
