Fancy Jiffy Cornbread

In our house, cornbread is a must-have side dish for soups, stews, and countless other meals. But we're not talking about the traditional Southern cornbread you might be used to in cornbread dressing — our family favorite is a fancy Jiffy cornbread! We've recently discovered a few extra ingredients to take it to the next level.

Equipment

Large mixing bowl
9 x 9 baking dish or cast iron skillet

Ingredients

2 8-ounce boxes of Jiffy Cornbread Muffin Mix
2 eggs
2/3 cups milk
1 cup sour cream
1/2 cup vegetable oil or melted butter
1-2 Tablespoons sugar optional

Instructions

Preheat oven to 400 degrees F.
In a large mixing bowl, dump the contents of 2 Jiffy cornbread muffin mixes.
Add the eggs, sour cream, milk, oil and sugar (optional).
Whisk all of the ingredients together until well combined. It's OK if there are a few lumps.
Pour into a greased 9 x 9 baking dish or cast iron skillet.
Bake at 400 degrees for 25-30 minutes, until toothpick comes out clean when inserted into the center.
