The first warm breeze of spring makes me crave lemon desserts, and these strawberry lemon blondies are exactly the kind of bright, feel-good treat that brings sunshine straight to your kitchen, no matter the season.
Prepare a 9 x 9-inch square pan with parchment paper or cooking spray sprinkled with flour.
With a mixer, cream the butter and sugar together until light and fluffy. Add the eggs, beating for another 2 minutes. Add the lemon juice, extracts, and zest. Mix well, and scrape down sides if needed.
In a separate bowl, whisk together the flour, baking soda and salt.
Slowly add the dry ingredients to the butter mixture and mix just until incorporated. Fold in the strawberries and white chocolate chips.
Spread into prepared pan. Bake for 30 minutes or until the toothpick comes out clean.
