Ingredients

boneless skinless chicken breasts

medium carrots

stalks celery

low-sodium chicken broth

bay leaf

fresh spinach

fresh cheese tortellini
Parmesan

Instructions
Add all ingredients to the slow cooker except tortellini and spinach.
Cook on low for 6 hours or high for 3 hours. Chicken should be cooked through and ready to shred.
Remove chicken to a plate, and shred with two forks. Place shredded chicken back into the slow cooker and add tortellini and spinach.
Cook until the tortellini is tender and puffy, about 10 minutes. Discard bay leaf and serve with fresh Parmesan on top.
