Instructions
Preheat the oven to 425 degrees F.
Rinse potatoes and peel, if desired.
Cut potatoes into long 1/2-inch pieces and place in a single row on the baking sheet.
Sprinkle the seasonings and olive oil on the potatoes and toss to coat.
Place in the oven at 425 degrees for 30-40 minutes, tossing every 15 minutes, until potatoes are golden brown.
