Crust Ingredients:

Instructions
Preheat the oven to 350 degrees F. Spray a 9 x 9-inch pan with cooking spray.
Finely crush the graham crackers in a food processor.
In a medium bowl, mix the graham cracker crumbs, sugar and melted butter together until well combined.
Press into the prepared pan and bake at 350 degrees for 10 minutes. Let cool.
With a stand mixer, whip the cream cheese until smooth. Add the condensed milk.
Next add the egg yolks one at a time until each is incorporated, followed by the lime zest and juice. Mix until all is well combined.
Pour mixture on top of the cooled crust and bake 350 degrees for 15-20 minutes or until set. Do not let it to brown.
Once done, Chill in the fridge for 2-4 hours before serving.
Cut bars and top with fresh whipped cream, lime zest and/or a lime wedge.
