Instructions
Preheat oven to 350 degrees F. Grease a 9 x 13 baking dish and set aside.
In a large bowl, combine the shredded chicken, black beans, cream of chicken, sour cream, rotel, corn, half of the cheeses, chili powder, cumin, and garlic powder. Stir until well combined.
Pour the chicken mixture into your prepared baking dish. Top with the crushed Doritos and the rest of the cheeses.
Bake for 25-30 minutes at 350 degrees until cheese is melted and bubbly.
Top with fresh cilantro and green onions, if desired.
Notes
Sub in pepper jack cheese if you want a spicier kick.
If you don't have Rotel, use a can of diced tomatoes and a pinch of cayenne or red pepper flakes.
Sub in taco-seasoned ground turkey or beef, which bings even bolder flavors than the chicken.
Add chopped celery or diced broccoli after softening them slightly, if you want to add more vegetables..
Stretch the filling by mixing in cooked rice or cooked pasta.
Use Greek yogurt in place of sour cream and reduced-fat cheese for a lighter sauce.
